is going to be an addition to what we have there,” she said. “Davidson
Hall is a predominantly academics building; there are lots of classes
that take place there, from first thing in the morning to our regular night
classes. We are hoping that bringing an anchor brand — like Subway
that provides breakfast, lunch and dinner options — will bring a lot
more meal options to the people in that building.”
Boudreaux recognizes the importance of national brands on cam-
pus. “I think it is important when you look at the demographics of the
students we have,” she said. “The national brands really resonate with
our campus population, and I believe that has to do with the consistency
of the national brands. They know that if they get their turkey sub at
a Subway off campus, that they will get the same turkey sub right on
campus. Having the right mix of national and local brands is very
important to U of L Dining, as well as the U of L campus community.”
