                                                     Syracuse RD Now a Master Trainer

                                                 yracuse University (SU) Food Services Registered Dietitian and Nutrition
                                             SEducator Ruth Sullivan has recently been certified as an Allertrain Master
                                             Trainer through Allertrain by MenuTrinfo LLC. As an Allertrain master trainer, she
                                             can now teach and certify Food Services staff on food allergies and celiac disease.
                                               To become a certified master trainer, Sullivan had to complete the Allertrain
                                             course, then take a full-day webinar through Allertrain. Master trainers are chosen
                                             based on their knowledge of food allergies, food intolerances and celiac disease.
                                             They must also have food industry and teaching experience.
                                               Allertrain’s certified teaching programs will enable Sullivan to keep SU Food
                                             Services staff up-to-date on all the latest food allergy, celiac disease, food intol-
                                             erances and food sensitivity information. To date, she has taught more than 200
                                             Food Services staff members, and they have become certified in identifying food
                                             allergy needs.



                                               Cortland Hosts Dark Chocolate Meditation


                                                  s part of SUNY Cortland’s Wellness Wednesday series, Auxiliary Services
                                              ACorporation (ASC) Nutritionist Andrea Hart recently hosted a “Dark Choco-
                                             late Meditation.”
                                               Hart discussed how nutrition and stress are related and gave tips on what foods
                                             to eat to help reduce stress and tips on mindful eating. She also explained the health
                                             benefits of eating dark chocolate.
                                               Hart began the meditation by having everyone relax and take deep breaths. She
                                             then gave instructions on how to eat chocolate in a relaxed and calm manner, while
                                             at the same time detecting the flavor, texture and smell of chocolate. After eating
                                             the chocolate, students commented on how good it tasted because they focused on
                                             the taste and scent by eating it
